Brown Sugar Mustard Glazed Corned Beef

Corned beef is so delicious and easy to cook that it deserves more than just St. Patty's Day to shine! This simple glazed roast is rich in umami with a salty sweet tang. Makes a fabulous sandwich too with arugula in a crusty roll.



  • A Whole Corned Beef 
  • Water
  • Brown Sugar
  • Whole Grain Mustard
  • Chinese Five Sauce Powder


Brown Sugar Mustard Glazed Corned Beef

  • In a large pot, place corned beef and fill with water. Bring to a boil and reduce to a simmer, covered. Simmer between 3-4 hours, until roast is tender. *Note: I pressure cook mine for 1.25 hours*
  • Let roast rest in water for a minimum of 30-45 minutes and preheat your oven to 400 degrees.
  • In a small sauce pan add 1 cup brown sugar, 1/4 cup water, 2 tbsp grainy mustard, 1/2 tsp Chinese five spice powder and simmer until sticky.
  • Place roast into a roasting dish that is not much larger than your roast and pour 1/2 of the sticky mustard sauce on top. Roast for 8 minutes and pour remaining sauce on top and roast for an additional 5 minutes.
  • Let rest for 10 minutes, slice, and enjoy!
