Cheesy Orzo with Spinach & Roasted Tomatoes

One of my favorite meals to throw together on days I get home late from work and don't have a meal planned. It pleases both the kids and grown ups because it kind of hits that mac n cheese vibe but you sneak in some veg. Also, it requires minimal clean up, and let's be honest, who wants to do a mountain of dishes after work?!


  • Orzo
  • Chicken stock
  • Cherry tomatoes
  • Garlic
  • Olive oil and butter
  • Parmesan Cheese

Cheesy Orzo with Spinach & Roasted Tomatoes

  • Preheat oven to 450 degrees.
  • In a small oven safe dish roast little tomatoes with garlic and olive oil until they are fragrant and burst (about 6 minutes) then set aside.
  • In a large sauté pan, toast orzo in extra virgin olive oil and butter until lightly browned.
  • Add in stock (chicken or vegetable) until the pasta is just covered. Simmer while stirring until the stock is absorbed then add more stock. Repeat this process until the pasta is cooked then add in one more bitches splash of stock.
  • Throw in a healthy sprinkle of Parmesan (or pecorino) cheese, a handful of spinach (or baby kale) and the roasted tomatoes.
  • I garnish each bowl with a drizzle of olive oil and red pepper flakes.


It’s such a comforting bowl of pasta that somehow feels light and bright. Sub in the ingredients you have in your fridge and make it your own!
