Easy Plum Cake
This is a total cheat recipe utilizing boxed cake mix, and I love it! I throw it together with any stone fruit and nut combo that I have laying around.
It makes a beautiful presentation and would be gorgeous on a brunch spread.
Easy Plum Cake
Ingredients:
- Plums or any stone fruit
- Pecans chopped
- Yellow Cake Mix (I love the Trader Joe's version)
- Apricot preserve
- Cinnamon
- Preheat oven to 350 degrees.
- Slice stone fruit and arrange in a circular pattern in a buttered cake pan.
- Layer on a sprinkling of toasted chopped nuts and cinnamon.
- Heat apricot preserves for 30-45 seconds in the microwave and pour over the plums.
- Make cake batter according to directions and pour half over each pan of plums.
- Bake for 30 minutes, but check for doneness after 25 minutes.
- Let cake rest on a wire racked until completely cool then turn over onto a dish.
- I love warming the slice of cake and serving with ice cream. Mmm!
