Everyday Rustic Bread


  • 3 cups flour
  • 3/4 tsp instant yeast
  • 1/2 tsp sugar
  • 1 Tbl salt
  • 3 cups warm water (100-120 degrees)

Everyday Rustic Bread

  • In a medium bowl combine dry ingredients then add in warm water and mix until a shaggy dough forms. Dough will not be an even texture but there should not be any large piles of flour in the bowl. Cover with plastic wrap and a dish towel. Let proof in a warmish area for 4 hours. I like to utilize my microwave for proofing!
  • After 4 hours, remove plastic wrap and turn dough onto a well floured counter. The dough will be incredibly sticky and soft and will have doubled in size. Sprinkle generously with flour and turn the edges of the dough towards the center approximately 12 times. Don't worry if you pop a few air bubbles while turning the dough. With each turn, rotate the dough slightly and turn again.
  • As you continue to turn and tuck the edges, the underside of the dough will smooth out nicely. Place the dough smooth side up into a bowl lined with parchment paper. Cover with a towel and let rest back in the microwave for another 30 minutes.
  • While the dough is taking its last nap, fire up the oven to 450* with a covered pot inside. Drop dough into the hot pot, cover, and into the oven it goes for 30 minutes. 
  • Remove the lid and let the crust set with another 8-10 minutes in the oven. Trust your nose. If it smells like its burning, check it!
  • Remove the bread and let it rest on a rack for around 2 hours, until cooled.
  • Slice it. Butter it. Jam it. Crouton it. Smother it. And then make it again!
