Simple & Bright Chicken Soup

This pot of soup is lifted with fresh herbs and a squeeze of lemon juice!


  • Whole Chicken
  • Onion
  • Sliced celery and carrots
  • Dill, parsley, lemon

Simple & Bright Chicken Soup

  • In a large pot, place chicken and whole peeled onion, then cover with water, and add in 3 tbl of salt
  • Bring to a boil over high heat, cover, and turn to low heat and allow to slow simmer for 1.5 hours or until chicken is falling apart.
  • Remove chicken and allow to cool. Remove onion.
  • Bring broth back to a simmer and add in sliced carrots and celery. Cover and simmer for 10 minutes.
  • Let chicken cool and then pick all meat off chicken and add back to broth.
  • Turn off heat and add in a handful of dill and parsley tied together with kitchen twine.
  • Let sit for at least 20 minutes and test for salt.
  • Cozy up and enjoy your simple & bright chicken soup!
